Will chef Jan Liebrechts reveal the secret behind his prize-winning croquettes? ‘The recipe was my father’s, who put shrimp croquettes on the menu the day he opened his restaurant – a real tradition. I ate them as a child, which is where my love for them was born. Obviously, I can’t tell you my secret recipe, but I do recommend starting from scratch with a fresh bisque and using only fresh ingredients, also for your finishing touches. And put a lot of love into your breading. We used to use traditional breadcrumbs, but we switched to Japanese panko for more crunch.’
