Few chefs allow strangers a glimpse behind the scenes in their kitchens, and this is no different for Quinten Goekint, managing director of Fort Napoleon, de Belevingsbrasserie, who has earned many a prize at the Shrimp Coquette Festival. ‘Our recipe actually owes its success to a setback. One of the ingredients we always used was no longer available in shops, so we were forced to seek an alternative. However, it is exactly this “new” ingredient that gives our croquettes their unique flavour. There are actually only few dishes that offer as much variation in terms of flavour and recipes as the shrimp croquette.’
