Bistro Chopin
Vivianne Fosse is the manager of Bistro Chopin, where her son works as the chef. ‘Nobody, except for my son, knows the recipe for our shrimp croquettes. That is what makes the product so unique. Every chef who makes them by hand has his or her own recipe. And you can be assured that this is quite a stressful operation! When you have a handmade product like this, there are plenty of things that can go wrong. You don’t want your croquettes to split open at the Shrimp Croquette Festival! My biggest tip for hobby chefs is to just come in and eat one of ours: a lot less work and, without a doubt, just as good.’
